A Scattering of Topics and a Recipe

I’m afraid I haven’t spent much more time in front of the computer the last few days than before. I think part of the issue is that I’m thoroughly enjoying the Olympics. I know there are only a few more days left, so I’m getting my fill. I’ll be so bored when NBC returns to regular programming, though I am looking forward to some new Friends episodes and, of course, Survivor Marquesas will be starting! I’m really looking forward to it this time around. I like the fact that they aren’t giving the Survivors food or fire this time. Very cool. I hope the show doesn’t disappoint!

Yesterday, we went in for one of our last ultrasounds at the RE’s office. They basically said that our insurance probably won’t cover many more ultrasounds with them, since things are going well right now and there is no medical need. I’m now at 11 weeks 3 days, almost into the 2nd trimester. Some people measure the 2nd Trimester as starting the 13th week while others say the 14th week marks the beginning of the 2nd trimester. Either way, I’m glad we are getting to that point. I must say that things are looking good and I’m feeling much more secure in this pregnancy. I’m almost afraid to write that though, out of fear of still jinxing myself. It was nice to have the ultrasound yesterday, but I must admit I wasn’t dying to have one this week like I had in the past. I just felt like everything was fine and indeed it seems to be. Our little one was dancing around and kicking and punching like crazy. Michael was teasing that our child already hauled off and punched me (he swears he saw a right hand hook aimed at my ovaries). I wonder if this means our little one will be as active when I can start to feel him/her.

It’s funny too, we both keep referring to the baby as a “he.” I have no reason why, but we both just have a feeling that this little one is going to be a boy. So much so, that I haven’t even looked at any girls names, but I have started looking at boys names. When I do go into a baby section at a store, I look around at the boys’ clothes and stay out of the girls section. (Part of it is that if I look at the girls section I’ll be dying to have a girl to finally buy for, since all my friends and family have boys!) During the ultrasound, the nurse did get a shot of “between the legs” but things are still so small and unclear that while it LOOKED like there might be a little penis there, it could have been the umbilical cord. We also know it is very early to try and make any kind of determination, but let’s just say that if we end up having a girl we’ll be rather surprised! And for those of you who were wondering or asking, yes, we are going to find out if we can ahead of time. I used to always want to wait until birth, but Michael is dying to know and I must admit I’m ready to know myself.

Skipping to yet another topic. Today I tried a new recipe. It’s for French Onion Soup. I love a good French Onion Soup. I haven’t tried this yet (I’m still simmering it), but I’m looking forward to trying it tomorrow for lunch with bread with melted cheese over the top. It smells pretty good. I hope it lives up to my expectations. Then I also made Chicken Pesto Boboli for dinner tonight. Yum! It’s easy to make and tastes wonderful. That along with a salad and we’re happy around here. It has a bit of kick to it too, which I love, so if you don’t like things spicy you can always leave out the green chili sauces. Here’s the recipe in case you want to give it a try.

Chicken Pesto Boboli

Ingredients

Regular (or thin crust – we prefer the thin crust) Boboli Shell

1 chicken breast, cubed

1 small bell pepper (red or yellow tastes best to us), chopped

4 oz. Mozzarella cheese, grated

4 oz. Pepper jack cheese, grated

Pesto

Green Chile Sauce (we use Mrs. Renfros)

Cayenne pepper

Chili powder

1 clove garlic

Olive Oil

Cook chicken in oil and add garlic. Add chili powder and cayenne pepper to taste. Cook until chicken is done then drain any excess fat and place aside.

Heat oven to 375 degrees. Place boboli onto pizza pan (or stone) and brush a thin layer of pesto onto the crust, then add 1-2 tablespoons of chili sauce. Layer chicken and bell peppers and top with cheese. Cook approximately 8 – 10 minutes (look for when the cheese is melted and crust is beginning to brown). Then eat and enjoy!

Well, this has been a mishmash of topics today hasn’t it? I’ve got some pictures I want to share soon too, but I was too lazy to download them from my camera today. Gosh, for someone who has all day to do things, I sure am lazy a lot lately! Now I’m going to head off and watch some more Olympic coverage. Oh and may I say here that I personally am very glad that Sarah Hughes won the gold medal yesterday for Women’s Figure Skating. The event should be based on that evenings competition, not passed competitions or mile long lists of past wins or accomplishments. It’s no different from the ski racing or skeleton racing or ski jumping. If the contestant doesn’t do well at the actual competition, they don’t win. Yesterday Sarah Hughes clearly skated the most difficult and cleanest program. She performed and completed perfectly more triple-triple combinations and triple jumps and she was relaxed and graceful. Her performance was truly fabulous. The others just didn’t skate as well yesterday. It was not their day. Unfortunately that is the nature of competition. For once, the judges were fair in awarding the gold to the unknown 16 year old underdog! Hurray! That’s not to say I’m not sorry for the others who didn’t skate well. The best competition would be one in which each person skated their best and flawlessly, but that isn’t how it works in life. Congratulations Sarah Hughes!
